One Pan Ginger Salmon and String Beans

PREP TIME: 30 MINS (unless rice is prepped beforehand)

COOK TIME: 30 MINS

TOTAL TIME: 30-60 MINS

INGREDIENTS

1 (4-6 oz) piece wild salmon

1/2 bag of organic string beans

1/2 cup organic brown rice cooked (can be long or short grain, I prefer short)

Fresh scallions and sesame seeds (optional)

For the Sauce:

1 clove garlic, crushed

2 tbsp of sesame oil

2 tbsp of Bragg's Liquid Aminos or Tamari

1 tsp minced fresh ginger

Sprinkle of salt

DIRECTIONS

1. Cook rice according to package (make a larger batch for meals throughout the week).

2. Whisk sauce ingredients together until combined.

3. Place salmon and string beans on parchment and pour over sauce until covered.

4. Sprinkle scallions and sesame seeds on top.

5. Bake at 375 for 18-25 minutes or until cooked to your liking.

6. Plate ½ cup rice with salmon.
